A little taste of Sevillian Summer

With Summer drawing ever closer, it’s nearly time to start thinking about afternoons in the sun, and evenings outdoors with good company.

Here at Fragata, we wanted to share with you a recipe that is quick and simple, yet tastes undeniably fresh and authentically Spanish. We guarantee that it is the perfect light bite to share around the table of a warm evening.

The recipe is an olive dressing based on typical Sevillian tapas, using typically Spanish flavours such as cumin, paprika and garlic. Here at Fragata, we love this taste of home best when accompanied by an ice cold beer, or a chilled glass or two of wine!

Ingredients:

1 jar of Fragata Pitted Green Olives
1 sprig of fresh thyme
1 sprig of rosemary or oregano
1/4 teaspoon paprika
1/2 teaspoon cumin
1 crushed garlic clove
1/2 diced red pepper
1 teaspoon olive oil

(The great thing about this recipe is that, if you have a preferred herb, or perhaps you prefer a more subtle garlic flavour, you can adjust the quantities to suit your tastes. Happy experimenting!)

Method:

Put the olives into a bowl, add the olive oil and stir until the olives are thinly coated.
Add the thyme, rosemary or oregano (or both!) paprika, cumin, garlic and red pepper.
Toss the olives in the bowl until the ingredients are evenly distributed.
Transfer to serving bowls.

It really is that simple!
