Olive & Herb Buns

These savoury olive and herb buns combine tangy yoghurt, mature Cheddar and sliced Fragata Piquillo Pepper filled Olives for a delicious Mediterranean-inspired bake. Flavoured with fresh dill, parsley and sage, the buns are soft, cheesy and packed with vibrant flavour, making them perfect for picnics, lunchboxes or serving alongside soups and salads.

Ingredients

500g plain flour

1 tbsp baking powder

1 tbsp fresh dill, parsley and sage, chopped

2 eggs, plus 1 egg yolk

300g yoghurt

50ml olive oil

100g Fragata Piquillo Pepper olives, sliced

100g Cheddar cheese

Black pepper

Method

1.

Preheat the oven to 190°C/170°C fan/gas mark 5 and line an oven tray with baking paper.

2.

In a large bowl, mix together the flour, baking powder and all the fresh herbs, then season with black pepper.

3.

Add the eggs, yogurt and olive oil and beat until combined well. Fold the olives in.

4.

Turn the dough out onto a surface dusted with flour, and knead into a large sausage shape. Cut the dough into 10 equal pieces.

5.

Cut the cheese into 10 equal wedges

6.

Take a piece of the dough and wrap a piece of cheese around it and shape into a bun.

7.

Repeat this process to make 10 buns in total. Place the buns on the prepared oven tray and brush with the egg yolk.

8.

Bake for 25-30 mins, until golden and cooked through.
