Chicken & Chickpea Picnic Salad

If you love a summer picnic but fancy something other than the usual sandwiches, why not try this easy chicken and chickpea salad? It’s just as simple to make, packed with fresh flavours, and perfect for enjoying outdoors. We used Fragata Garlic & Herb and Hot Chilli Olive Pouches, but you can easily swap them for any of your favourite Fragata olives.

Ingredients

250g leftover roast chicken

160g chickpeas

100g cherry tomatoes, halved

90g cucumber, diced

50g celery, thinly sliced

Half a red onion, thinly sliced

Chopped parsley

70g Fragata marinated stoneless olives pouches

For the dressing: 2 tbsp red wine vinegar

6 tbsp extra virgin olive oil

1 tsp mustard

Method

1.

Chop and prepare all the salad ingredients.

2.

Place in a food storage container or picnic box.

3.

In a small jar, put all the dressing ingredients and shake it mix.

4.

Pour the dressing over the salad just before serving.
