Cabbage and Olive Crush Bites

Ideal as a canapé, starter or colourful addition to a sharing table, these cabbage and olive crush bites are quick to prepare yet striking in both taste and presentation.

Ingredients

1 sweetheart cabbage

1 tsp sweet paprika

70g extra virgin olive oil, plus 1 tbsp

2 tsp clear honey

2 tbsp white wine vinegar

2 tbsp soft goats cheese

1 garlic clove, crushed

50g piri piri pepper-filled olives, chopped

4 tbsp crushed hazelnuts

2 tbsp fresh coriander, roughly chopped

chilli sauce, to drizzle

lemon zest, to serve

sea salt and black pepper

Method

1.

Preheat a griddle pan to hot and cut the sweetheart cabbage into six lengthways wedges.

2.

Place the cabbage wedges in a bowl and sprinkle in the paprika, coating the cabbage wedges completely.

3.

Drizzle with 1 tbsp of the olive oil and season with salt and pepper.

4.

Place the cabbage wedges on the griddle and cook for 5 mins on all sides, with an oven tin and weight, like a can of tomatoes, on top. Remove the oven tin and cook for 5 mins on each side again, until charred and cooked through.

In the meantime, make the dressing by placing the honey, white wine vinegar, goats cheese, garlic, half of the olives and the remaining olive oil in a bowl and whisking together until smooth. Season with pepper.

6.

Cut the cabbage into bite-size pieces and insert a cocktail stick into each, and transfer them to a serving plate and drizzle with the dressing, top with the hazelnuts, coriander and lemon zest.

7.

Drizzle with the chilli sauce and serve.
