- 250g Fragata Stoneless Hojiblanca Green Olives
- 8 garlic cloves
- 250ml gin
- 250ml good quality olive oil
- Slivers of lemon peel from 1 lemon
- 2 tbsp fresh thyme
- Mix all the ingredients in a large bowl until well combined.
- Store in an air tight jar and use as necessary. These are great served on a festive cheese board or in a cheeky martini.
